Navigate to:
C:\Program Files (x86)\Steam\steamapps\common\Planet Zoo\win64\ovldata\Content0\Animals\Iguanas

Back up your iguanas. 🙂 Both green iguana and Antillean are included for all colors. There is a cool variant difference between hypomelanistic greens vs Antilleans. [Screenshots included in download folder.]

Pick a color, and overwrite the file in the directory listed. (Yours may vary.) Swap colors between game launches any time you want! It won’t affect your iguanas or save file.
